Product Description:
  
The product is obtained from beef rump coming from animals of an average age of 24- months. It is then salted, pressed into a semi-cylindrical shape, enveloped in natural gut and aged. At the end of the aging process the Valtellina Bresaola IGP is marketed in four principal formats, described as follows. The IGP mark, accorded by the Consortium for the Protection of Valtellina Bresaola in 2000, is a further guarantee for the consumer of the absolute quality of the product and the exact compliance with the Production Rules and Regulations in all phases of the production process.
